Dinner Rolls

Ingredients :

  • 4 1/2 – 5 cups All purpose Flour/Maida
  • 3 Tsp dry Yeast
  • 1/2 cup warm water
  • 1 Cup milk
  • 90 gms unsalted Butter
  • 3 Tbs Sugar
  • 1 1/2 Tsp Salt
  • 1 Egg
  • 1 Egg white for egg wash
  • Sesame seeds to sprinkle ( optional)

Process :

  • First sift just 4 1/2 cups flour in a big bowl.
  • Meanwhile bring the milk to a single boil remove from heat , dunk the butter in it and 2 Tbs of sugar and let it cool down until it’s lukewarm.
  • While the milk is coolin heat the waterto the right temp for proofing the yeast. Add 1 Tbs sugar and the yeast and let it rest for 10 – 15 minutes.

  • Beat egg in another bowl and keep aside.
  • Once the milk is lukewarm add the beaten egg.
  • Make a well in the flour and pour the yeast mixture and the egg mixture.
  • Start kneading and bringing them together .
  • Towards the end add the salt and keep kneading till it comes together , if it is too sticky keep adding little flour toll it is mooth and very pliable.
  • Take out on a floured surface and knead it well for atleast 10 minutes .
  • Now grease a big plastic bowl put the dough turn it once to coat it with oil and cover and let it proof for 2-3 hours.

  • Once the dough has doubled in size after and hour, gently pull it and deflate it.

  • Make about 16 small same size balls and place them and inch apart on the baking tray lined with parchment paper.
  • Now cover with kitchen towel and keep it for the second rise for about 40 minutes.
  • After 40 minutes, brush the tops with egg whites and sprinkle sesame seeds if using and put it in a pre-heated oven at about 190 C for 20 – 25 minutes.

  • Keep checking, once they are browned remove brush the top with butter and let it cool for sometime before munching :p
