Apple Upside Down Cake

So it was my Dad’s birthday yesterday. Well just like my Mom, I too make it a point to celebrate birthdays and anniversaries of immediate family member even if they are far away. Anyways after giving it a lot of thought I ended up making this simple, no frills cake…..just like my Dad would have liked it , had he been here. He is not a big fan of heavily frosted cakes which tend to become overtly sweet. So following the recipe almost to the T from one of my favourite baking website, Sally’s Baking Addiction, I ended up making the most delicious upside down apple cake. This is the second time I made and it was way better than the first attempt. It was so good that unlike other times where a few pieces are left for the next day…the entire cake got wiped off the same evening by my two brats… so yes it was indeed a sweet birthday .

Ingredients :

  • 3 Apples, slightly tart and crisp ones
  • 2/3 Cup Dark Brown Sugar
  • 1/2 Cup unsalted Butter
  • 1 Tsp Cinnamon powder
  • 1/2 Tsp Nutmeg powder
  • 1/4 Tsp Sea salt

For the Cake :

  • 1 1/2 Cup AP Flour
  • 1/2 Cup Brown Sugar
  • 1/2 Cup Castor Sugar
  • 2 Eggs
  • 1/2 Cup unsalted Butter
  • 1/4 Cup Milk ( at room temperature)
  • 1/4 Tsp Salt
  • 1 Tsp Baking Powder
  • 1/2 Tsp Cinnamon Powder
  • 1 Tsp Vanilla extract

Method :

  • Wash, peel and cut the apple into thin wedges and keep aside.
  • Heat butter till it just starts to boil, add the brown sugar and mix well. Now add the sea salt, cinnamon powder and nutmeg powder and stir well to combine.
  • Grease nicely a 9″ baking pan and layer the apple slices neatly at the bottom.

  • Pour the butter and sugar mix evenly all over it.

  • Now to make the cake batter, sift together the flour, baking powder, cinnamon powder and salt and keep aside.

 

  • Cream the butter and sugar with a hand held whisk till it is smooth and creamy. Then add the eggs, beating well after each addition. Add the vanilla extract and stir well.

  • To this add half the flour mix and fold it in with a spatula, then add the milk again mix lightly ( do not over beat) and add the remaining flour mix and again fold it in till combined well.
  • Finally pour the cake batter over the apple and syrup in the pan. Spread it evenly. Place in a pre-heated oven at 170 C for 45 minutes or more, till a tooth pick inserted comes out clean.

  • Remove from the oven and let it rest for 10 minutes. Now overturn the cake in a plate and let all the juices come out. Serve warm as is or with ice – cream.
